Dish: Oatmeal Creme Pie Cookies

Ingredients: Butter, dark brown sugar, white sugar, maple syrup, vanilla, eggs, flour, salt, baking soda, cinnamon, quick oats, marshmallow cream, powdered sugar
How To Make It:
Make the Cookies
1. Cream 1 cup butter, 3/4 cup brown sugar, 1/2 cup white sugar, 1 T maple syrup, 1 tsp vanilla and 2 eggs.
2. Combine 1.5 cups flour, 1/2 tsp salt, 1 tsp baking soda, 1/8 tsp cinnamon in a separate bowl.
3. Add the dry mixture to the creamed mixture.
4. Mix in 1.5 cups quick oats.
5. Put dough in small scoops on an ungreased cookie sheet. (The smaller, the better - they really spread!)
6. Bake at 350* for 5-7 minutes. Don't overcook - once the edges start to brown, they're done! Don't worry if the middle looks raw.
Make the Filling
7. Dissolve 1/4 tsp salt in 2 tsp hot water. Allow to cool.
8. Combine 1 jar (7 oz) marshmallow cream, 1/2 cup butter, 1/3 cup powdered sugar and 1/2 tsp vanilla. Mix on high until fluffy.
9. Add the salt water and mix.
10. Spread filling on one cookie.
11. Make sandwiches!
These were really good. Better than Little Debbie, in my opinion!
