On the 4th night of Hanukkah, we attempted our first homemade latkes.
Dish: Latkes (AKA potato pancakes)
Eaten With: Sour cream, applesauce, salad
Main Ingredients: Potato, sweet potato, onion, flour, egg, nutmeg, cinnamon, baking powder, vegetable oil
How to Make:
We were nervous at first, since the only way we've done it before is to hand-grate the onion and potatoes, which took a long time and was rough on our fingers. However, we have a secret weapon:
My stand mixer came with a grater attachment which was a-mazing. It made short work of two potatoes. The gratings were nice and thin.
We did one regular potato, and one sweet. Here's the recipe:
2. Transfer to a colander and squeeze to press out as much liquid as possible.
3. Add 1 egg and 1 tablespoon of flour per potato (we kept ours separate), and season with salt and pepper (regular potato) or cinnamon and nutmeg (sweet potato). Add 1/8 teaspoon baking powder per potato. Mix well.
4. Heat oil in a frying pan. Drop about 2 tablespoons of the potato mixture into the pan and flatten. Fry over medium heat about 3 minutes on each side until golden brown and crisp. (Think hash browns.)
5. Serve with sour cream or applesauce on the side. Enjoy!
